Today we're going to tell you how the Paris-Brest cake, that giant of French pastry, was created.
It also serves as a Birthday Cake.
Although it was originally made in the shape of a laurel wreath, this format no longer reflects its history.
In 1910, in honor of a bicycle race between Paris-Brest-Paris, Louis Durand, pastry chef at Maison Laffitte, created the famous cake, inspired by a bicycle wheel.
Despite being French, the Paris Brest cake has become international and maintains the same success as its original.
This true delight is composed of Pâte-à-Choux with Praline Cream (Chocolate with Hazelnut).
