Dom Pérignon is perhaps the best known of the French Champagnes.
A tribute to the Benedictine monk of the same name, a pioneer in its production,

Pérignon was the first to blend different types of grapes, use thick bottles, and use a cork stopper tied with hemp cord.

In the time of the monasteries, grapes were given by local farmers as payment of their tithe.
And collectively vinified, regardless of differences in varieties or place of origin.

Blending became an art in the hands of notable religious producers, such as the monk Dom Pérignon, treasurer of the Abbey of Hautvilliers in “Champagne”.
He specialized in combining selected grapes from different origins to improve the wine's balance.

Meanwhile, many years later, the Champagne Houses copied the method:

  • exploring the diversity of each territory;
  • and blending wines from different grape varieties and different vintages

Aiming to produce a cuvée of superior quality to any of the others.

This blend enabled the creation of harmonious Champagnes and paved the way for sparkling wines with character. Offering a flavor and quality that was unprecedented at a time when producers were at the mercy of nature.

Champagne dates back to the dawn of Christianity, however, its rules and boundaries were only defined in 1927. It was only officially recognized in 1936.
