Today we're going to tell you how the Paris-Brest cake, that giant of French pastry, was created.
It also serves as a Birthday Cake.
Although it was initially made in the shape of a laurel wreath, its current form no longer reflects that history.
In 1910, in honor of a bicycle race between Paris-Brest-Paris, Louis Durand, pastry chef at Maison Laffitte, created the famous cake inspired by a bicycle wheel.
The Paris Brest cake, despite being French, has become internationalized and maintains the same success as its original today.
This true delight features Pâte-à-Choux with Praliné Cream (Chocolate with Hazelnut) in its composition.
